Michelin-starred Osip to host one-night collaboration with Paris chef Atsushi Tanaka

Merlin Labron-Johnson of Osip in Bruton, Somerset will collaborate with Paris-based chef Atsushi Tanaka for a one-night-only dinner this September. The event, part of the restaurant’s ongoing Osip Collaborates: Japan series, will take place at Osip’s new countryside location and aims to highlight Japan’s culinary influence on the British chef’s cooking. This will be the third instalment in the series, which has previously featured Tetsuro Maeda of Txispa in the Basque Country and Endo Kazutoshi of Endo at the Rotunda in London, and will conclude with = Kanji Kobayashi of Villa AiDA in Wakayama in December.

Atsushi Tanaka is known for his eclectic gastronomic style, shaped by international experience at establishments such as Pierre Gagnaire (Paris and Tokyo), Quique Dacosta (Alicante), Geranium (Copenhagen) and Frantzén (Stockholm). In 2014, he opened his own restaurant, A.T, in Paris, which was awarded a Michelin star in 2022. His cooking is characterised by artistic presentation and a fusion of textures and flavours, influenced by both his Japanese heritage and French culinary training.

Osip, which moved to its current rural site in 2024, has been recognised with both a Michelin star and a Green Star for its sustainable practices. The restaurant continues to explore the intersection of local British produce and global culinary influences through projects such as this collaborative series. September’s event will see Labron-Johnson and Tanaka devise a menu on the day, using ingredients freshly harvested from Osip’s own farmland. The restaurant explains, “The resulting menu will see the two chefs together draw from the precision and elegance of Japanese fine dining whilst celebrating provenance, seasonality and hyperlocal produce.”
