A new steakhouse, MRBL, is scheduled to open on 3rd March in London’s historic Leadenhall Market, with a focus on local beef and an extensive wine list. The eatery will be led by restaurateurs Anthony Gaughan and Stephen Bagatti, known for their previous venture, Boom Bap burgers. The launch is part of a broader transformation of the iconic venue into a prominent dining destination in the City.

MRBL will occupy a two-storey site within the ornate Victorian market, offering 75 covers, including a private dining room and an outdoor terrace overlooking the architecture. They will operate seven days a week, from midday until 9pm, catering to both weekday and weekend diners.

The culinary direction will be overseen by executive chef Matt Colk, whose previous experience includes Aviary Rooftop & Restaurant and The Gun. Colk outlined the new establishment’s approach, saying, “At MRBL, everything begins with quality and provenance. We work closely with suppliers who share our values. It’s about respecting the ingredient and letting it speak for itself”.

The menu centres on steaks supplied by award-winning butcher HG Walter. All beef will be sourced from native British breeds, slow-reared and grass-fed, then aged using Himalayan salt before being cooked over charcoal. There will be a range of house cuts such as Chateaubriand and Porterhouse, designed for sharing, and steaks will be served with a choice of flavoured butters and classic sauces. Sides include marrow mash, beef fat triple-cooked chips and crispy hash browns with black garlic aioli, as well as lighter options like Caesar Salad and charred hispi cabbage.

In addition to steak, the food offering features dishes such as grilled monkfish tail and roast chicken, all also prepared over charcoal. Desserts include apple pie with custard, a Burnt Lemon Tart and a British cheese plate, complemented by a selection of dessert wines, ports and after-dinner cocktails.

On the lunch menu there’s a steak sandwich with slow-braised rump, smoked cheese and Guinness onions, and for after-work refreshments the team offers martinis and fries. The wine list, curated in collaboration with consultant Nicola Hale (Vin Hale), will balance classic regions with lesser-known producers. Craft beers, lagers, Guinness and house cocktails will also be available.

Gaughan and Bagatti cite the location’s history as an inspiration for MRBL’s concept, saying: “We are incredibly excited to be bringing our vision to life in such an iconic City location. Leadenhall Market was once home to London’s meat, game and poultry traders – MRBL feels like a natural evolution of the market’s deep-rooted history. We hope MRBL honours that tradition whilst bringing a fresh, contemporary energy to the space.”
