Georgian restaurant and wine bar DakaDaka to open in Mayfair for a modern take on ancient cuisine

A new restaurant and wine bar spotlighting Georgian cuisine is opening in Mayfair this November. DakaDaka will bring a modern interpretation of the country’s culinary and winemaking traditions to the capital in the first London project from Berkeley Square Hospitality – a venture led by Giorgi Mindiashvili and chef patron Mitz Vora. Mindiashvili commented, “DakaDaka is a project we’ve been quietly building toward for years. Georgian food is rich in history, culture and meaning, and I’ve long felt there was space in London to showcase it with care. This restaurant brings together deep-rooted tradition, everything I’ve learned over the years, and my belief in what hospitality can be.”
Vora, who has worked at establishments including The Palomar and The Hoxton, is joined in the kitchen by head chef Adrian Hernandez Farina, whose previous experience includes Chiltern Firehouse and Humo. Their menu aims to introduce London diners to one of the world’s oldest yet lesser-known food cultures, centring around open-fire cooking and seasonal ingredients. Georgian staples such as Khinkali dumplings, Adjarian Khachapuri (cheese-filled bread) and Pkhali (vegetable spreads) will feature prominently, as well as larger dishes including skewered and grilled Duck Breast Mtsvadi and Short Rib Kharcho, a slow-cooked stew with smoked walnuts.
The wine list, curated by sommelier Honey Spencer, will showcase over 100 natural wines, including selections from producers from the region, such as Pheasant’s Tears and Archil Guniava. Spencer, who has worked with The Palomar and Evelyn’s Table, has designed the list to complement the bold flavours of the food. There are also cocktails created by Jack Porter that will highlight Chacha, a traditional Georgian grape spirit.
The two-floor venue will accommodate 105 diners, with a ground floor that features an open kitchen centred around a wood-fired hearth and charcoal grill, as well as a marble bar. The lower level will house a wine and cocktail bar, private dining room and event space with a vinyl collection and DJ station. Interior design for the space has been led by Katya Samsonadze of Communal Design Studio, who has incorporated materials and craft traditions from the Caucasus, while displaying folk artefacts and artwork by Georgian painter Niko Pirosmani throughout.
Vora says, “There is a beautiful depth to Georgian cooking – the techniques, the ingredients, the stories behind each dish. I’ve worked across the industry for years, but DakaDaka is a project that feels different. It’s an opportunity to create something from the heart – a place where people come together around the table in a meaningful way, as we have done countless times in Georgia.”
