Sorbito opens in Stoke Newington as London’s first dedicated mezcal tasting room and bottle shop

Sorbito, a new mezcal-focused tasting room and bottle shop, has opened its doors in Stoke Newington, in North London. Launched by The Sin Gusano Project, the venue aims to provide a unique space to explore agave-based spirits, particularly mezcal. The opening marks a significant milestone for the Sin Gusano team, nearly a decade after their first agave pop-ups in Gillett Square and Haggerston.

The name, which translates from Spanish as little sip, reflects the venue’s self-guided tasting format. Visitors use preloaded cards to access samples from enomatic dispensing machines—typically found in wine bars but here adapted for agave spirits. The machines offer an evolving selection of rare mezcals, most of which are sourced directly from Mexico.

Although the tasting process is self-service, staff are on hand to assist and provide information about the spirits on offer. All mezcals available for tasting can also be purchased to take home, either in their original bottles or in Sorbito’s own refillable 200ml containers. This initiative is part of a broader sustainability effort: guests can return any undamaged Sorbito, MAS, or Sin Gusano bottles in exchange for credit on future tastings.

The venue also serves a small selection of complementary items, including draft beers, a rotating agave-based cocktail, non-alcoholic options, and bar snacks. While mezcal is the central focus, Sorbito is also positioning itself as a community hub for agave enthusiasts. Even before its official opening, the space hosted talks by Oaxaca-based author Anna Bruce and Mexican anthropologist Vinik Jure. Future events include tastings led by Gaby Moncada of Speciality Brands and Jesse Estes of Ocho Tequila.

Sorbito also functions as a behind-the-scenes workspace for The Sin Gusano Project. The venue includes bottling equipment and serves as a logistics base for the brand’s UK operations.
