Ollie Dabbous to host two-week residency at Kāio in west London
Chef Ollie Dabbous will host a two-week residency at Kāio, the live-fire restaurant that opened in west London last month, running from Wednesday 16th September to Saturday 26th September. The collaboration, staged at the restaurant’s site within The Whiteley on Queensway, will see Dabbous work alongside Kāio head chef Sachin Mistry on a six-course tasting menu built around seasonal produce and cooked using the restaurant’s open-fire kitchen.
Dinner will be served on Wednesday 16th to Saturday 19th September and again from Wednesday 23rd to Saturday 26th September. The six-course menu is priced at £95, with a vegan alternative available at £80. A wine pairing can be added for a further £75.
The meal opens with a series of appetisers: Grilled Sticky Rice with yellowtail and black pepper; flatbread cooked in the tabun with date molasses butter and fennel pollen; and Iced Melon Gazpacho. These are followed by Dabbous’s Coddled eEgg, a dish closely associated with the chef since the early years of his career.
The menu then moves to grilled late-summer vegetables with pesto, served to share, before a main course of Chilean Seabass with plum wine broth, coco beans, dressing and sour cream. Dessert consists of freshly churned Tahitian Vanilla Ice Cream, Warm Brown Butter Madeleines and Raspberries in a Lemon Verbena Punch.
Dabbous co-founded and led Hide in Piccadilly and won a Michelin star within six months of opening his eponymous restaurant, Dabbous. Mistry has previously worked at The Grill by Tom Booton at The Dorchester, BiBi, the Michelin-starred The Cross at Kenilworth, and Akoko.
Explaining how the collaboration came about, Dabbous said: “Kāio’s head chef Sachin invited me to taste their new live-fire restaurant. I had a fantastic meal full of clean, fresh flavours, so when he asked if I was keen to collaborate on a residency in September, I thought it was a great opportunity to reconnect with the public. I am excited to work with their team and add to the buzz of the opening.”
Mistry said: “I have long admired Chef Ollie and have found working with him on this residency an inspiration. I am proud to work alongside him in my own kitchen and can’t wait to serve this collaborative menu.”
Kāio opened in August on a corner site within The Whiteley, the £1.5 billion redevelopment of the former Whiteleys department store. The venue includes a dining room, a 360-degree cocktail bar and a rotunda-style outdoor terrace. Its name is taken from an ancient Latin word associated with fire, burning and kindling, a reference to the restaurant’s cooking method.
