Original recipe of the week: Coconut truffle squares

Is it that special someone’s birthday and you are stuck on what to buy or what not to buy? Make them something they’ll love instead! With our yummy recipe, delicious as well as easy to make, you won’t need to worry.

The perfect blend of coconut oil and rich dark chocolate is enough to make anyone’s day.

Coconut truffle squares

Serves: As many as you like

Preparation time: 10 minutes

Chill time: 3 hours

What you will need:

400g best dark chocolate (72%) – chopped into small chunks
3 tbsp coconut oil
1 tsp salt flakes
250ml double cream
100g soft dark brown sugar

What you need to do:

  1. Gently heat the cream and sugar until warmed and the sugar has melted – be careful not to boil it.
  2. Remove from the heat and add in the chocolate, and continue to stir until all the chocolate has melted into the cream and sugar mix. Now add in the coconut oil and salt.
  3. Stir again to combine.
  4. Pour the mix into a lined rectangle cake tin, and place in the fridge to set for about 3 hours.
  5. When set, remove and cut into small squares (or however big you wish). Now all you have to do is decorate and you are ready to pack and go.
