Road to the World’s 50 Best Restaurants 2017: Massimo Bottura of Osteria Francescana

Ahead of the highly anticipated World’s 50 Best Restaurants ceremony 2017, we spoke with Massimo Bottura, chef of the acclaimed Osteria Francescana, who is set to open soup kitchen Refettorio Felix in London this summer.

Iconoclast, visionary, culinary maestro, Bottura and his exceptional cuisine frequently border on the ineffable. Once seen as something of an avant-garde upstart in his hometown of Modena, Bottura has won the respect of both the town and the world at large with his superlative three-michelin-starrred restaurant. Coming tantalisingly close to the pinnacle of the 50 Best list with second place finishes in 2014 and 2015, Bottura finally took the crown last year. He talks to us about his fervent enthusiasm, his passion for art, and one of his most iconic dishes.
