On 7th November, Mayfair restaurant Nijū will host a one-off experience of Japanese and Thai flavours. The event will feature a six-course collaboration dinner with Kolae, renowned for its authentic Thai cuisine. 

The evening promises a sequence of dishes blending the distinct culinary styles of both Nijū’s executive chef Chris Golding and Kolae’s chefs Mark Dobbie and Andy Oliver. The trio, who previously worked together at the Michelin-starred restaurant Nahm in Bangkok, will showcase creations such as Bang Bang hamachi with coconut cream and kafir lime, paired with a Rum & Leaves cocktail prepared with Brugal 1888 rum, lime leaves, fig leaves, matcha tea, and mint soda.

Other highlights include Khao Yum Rice Salad with quail egg and bai yor, Miso Bouillabaisse with Japanese saffron rouille and yuzu kosho croutons, and Kolae Beef Rib with pickled cucumber, sour mango, and anchovy salad. Nijū style nigiri will also be present on the menu, ensuring a comprehensive tasting honouring both Japanese precision and Thai boldness.

The drink pairings for the night are curated by Brugal, a premium rum brand from the Dominican Republic known for its smooth and complex rums aged in hand-selected oak casks. The drinks list will complement the dishes with cocktails that include tropical notes and rich flavours, enhancing the overall dining moment.

Chef Golding has been pivotal in establishing Nijū as a favourite destination for Japanese cuisine in London. His approach combines traditional techniques with modern culinary innovations, focusing on seasonal and sustainable ingredients. On the other hand, chefs Dobbie and Oliver of Kolae have made a name for themselves with their dedication to authentic Thai flavours, drawing from their extensive experience in some of the world’s leading kitchens.

This collaboration is part of Nijū’s Yūshoku Club, a series of supper clubs that have previously seen partnerships with notable establishments the likes of Ekstedt at the Yard and Aulis London.
