Fitz’s Bar at the Kimpton Fitzroy London has unveiled SPECTRUM, a cocktail menu inspired by synaesthesia, a condition where sensory experiences are intertwined, in this case, colours perceived as flavours. Curated by Bar Manager Massimiliano Bosio, the list entails an array of 12 cocktails each embodying a shade, allowing patrons to taste a spectrum of colours. 

The concept of synaesthesia in mixology is novel, aiming to translate the visual stimulus of colours into complex flavour profiles. Highlights from the menu include the Black Hole, a concoction of gin, mezcal, and walnut, designed to capture the essence of dark hues, and the Sapsucker, a vibrant mix of tequila and spiced rum, reflecting the bright and zesty tones of yellow.

Massimiliano Bosio, with experience earned at venues like Homeboy and the D&D London group, leads this creative chapter for the bar. “We’re delighted to introduce the SPECTRUM cocktail menu, a first of its kind that combines the art of mixology with the sensory magic of synaesthesia. Each drink tells its own colourful story, offering an immersive experience for our guests. We can’t wait for people to explore the flavours of the spectrum in a truly unique way,” Bosio commented on the new menu.

SPECTRUM is divided into light and dark themes. Lighter tints feature refreshing, vibrant blends while the darker shades offer more intense, bold flavours. For instance, the King of Persia under the dark theme, draws from the regal connotations of purple, blending floral and fruity notes with spirits like gin and a Pinot Noir reduction. Conversely, the Green Dragon from the lighter selection, promises freshness with its mix of rum, gin, and tropical flavours like lychee and coconut.

Further exploring the darker tones, Taboo represents the passion of red through a spicy mix of tequila and whisky, complemented by mandarin and strawberry. On the lighter end, the Morning Dip encapsulates the calmness of light blue with a concoction that includes Irish whiskey, vodka, and hints of passion fruit and brown butter, designed to evoke the serene feeling of a morning swim.
