Jordan Bailey of Michelin-star fame opens burger joint Heard in London

Jordan Bailey, known for his work in Michelin-starred restaurants, has launched new burger joint Heard in Borough, London. Opened next to Flat Iron Square, it delivers a classic smash burger made with high-quality ingredients and elevated by advanced techniques.

Heard offers a menu centred around double-patty smash burgers, crafted from aged British beef, English cheese and homemade pickles, all nestled within a unique butter-toasted roast potato bun. The restaurant, which can accommodate 40 diners, pairs its burgers with carefully selected wines and craft beers, a concept developed by Bailey’s wife and sommelier, Majken Bech-Bailey.

Jordan Bailey’s career has been marked by his stints at prestigious restaurants including the Michelin-starred Elephant Restaurant in Devon and the two-Michelin-star Restaurant Sat Bains. His experience culminated in his role as head chef at Maaemo in Oslo, where he helped the restaurant earn its third Michelin star. Later, alongside his wife, he opened Aimsir in Ireland, quickly earning two stars, driven by a dedication to local Irish produce.

At Heard, Bailey continues his commitment to quality and sustainability. The meat, sourced from HG Walters, comes from UK farmers practicing regenerative agriculture, ensuring ethical and environmentally conscious choices. The restaurant’s cheese selections are sourced from top UK producers and even the pickles are prepared in-house.

“We’re proud to work with some of the UK’s best producers who champion ethical farming practices, and a fully transparent supply chain – from farm to table. Our mission for Heard is simple: to create a ridiculously tasty burger, crafted with Michelin-level attention to detail and top-quality ingredients,” stated Bailey.

The beverage offerings at Heard are as meticulously considered as the food. Majken Bech-Bailey has personally sourced high-quality, organic wines and local craft beers to complement the burgers. The restaurant also features her non-alcoholic wine brand, BÆK.

Menu highlights include the signature burger The OG with jalapeño hot honey, Ogleshield cheese and secret sauce, paired with choices like riesling from Domaine Rolly Gassman or pale ale from Forest Road Brewery. For vegetarians, the Wild Umami Burger offers a house-made black bean and wild mushroom patty.

Following the success of the Heard food truck at major UK festivals, plans are underway to open a flagship restaurant off Carnaby Street this spring, marking a significant expansion for the brand.
