Restaurant Haerlin earns third Michelin star, making Hamburg a top destination for fine dining

Restaurant Haerlin, located in the Fairmont Hotel Vier Jahreszeiten in Hamburg, has been awarded its third Michelin star – the highest distinction given by the Michelin Guide. The accolade was announced on Tuesday evening, marking a significant milestone for the establishment and its executive chef, Christoph Rüffer. This recognition places Hamburg alongside Munich as the only German cities with two restaurants holding three Michelin stars. The award comes after 13 consecutive years of Haerlin maintaining two stars, reflecting their ongoing commitment to culinary excellence.

Chef Christoph Rüffer, who leads an 18-member team, expressed his elation at receiving the honour: “I could hug the world! In recent years, I have worked very hard with my team and right-hand man, Tobias Günther, setting new challenges for us all each day. A recognition such as this is the ultimate reward for the copious hours behind the stove, deep in the vegetable field, dealing with new products and the occasional sleepless night. For me, personally, this is a lifelong dream come true.”

Restaurant Haerlin’s menu focuses on seasonal ingredients, with dishes that highlight regional products and sophisticated culinary techniques. It also features an extensive wine selection curated by sommelier Christian Scholz, with service overseen by Marius Jürke. The Michelin Guide has consistently praised the restaurant for its innovative concepts and refined flavour combinations, and the third star is a testament to the team’s drive to push creative boundaries and maintain high standards. According to Ingo C Peters, managing director at the Fairmont Hotel Vier Jahreszeiten, the achievement is the result of sustained effort and teamwork. Peters stated: “I am immensely proud of Christoph Rüffer and his entire team at Restaurant Haerlin, as only a close-knit unit such as this can achieve such a highly coveted accolade. We have worked hard for many years on the experience in Restaurant Haerlin and have spared no expense or effort in recent times to raise Haerlin to the best culinary level, together with our owners, the Dohle family. With this honour from the Michelin Guide, a real dream has also come true for me, as the director of the establishment.”
