A new food event, the Toklas Sandwich Market, will debut in central London on Saturday 12th July at Toklas on Surrey Street just off the Strand. The market, running from 11am until 3pm (or until supplies run out), brings together a range of London chefs and restaurants, aiming to showcase a variety of sandwiches that reflect the city’s ongoing enthusiasm for inventive bread-based fare. Kyran McAdam, head chef at Toklas Bakery, will launch the event with a new Toklas Brioche Bun filled with salame rosa and cheese fonduta. McAdam collaborated last Christmas with Jeremy Chan of Ikoyi on a festive brioche sandwich, and has spent the past six months refining his sandwich offerings.

Organised by Toklas Bakery in partnership with the restaurant Cebo, the day will feature contributions from across London’s culinary scene. Among those participating are Chris Leach of Manteca, Mike Davies from The Camberwell Arms, and new Roman restaurant Lupa, headed up by Ed Templeton, Theo James and Naz Hassan. Other contributors include Elliot’s London, The Marksman, Ed Wilson’s Brawn, Robin Gill of Darby’s, Crispin, The Palomar and The Prince Arthur (overseen by Emma Piggott, owner and director of All the Best). The Sandwich Market comes at a time when sandwiches are enjoying renewed popularity in the capital, with recent successes such as Sarnie Party 2025 and Michelin-starred Trinity Upstairs’ new sandwich truck in Clapham. Organisers say the market hopes to appeal to Londoners’ growing interest in creative, high-quality sandwiches.

The line-up includes a variety of options: Elliot’s will serve a puccia stuffed with prosciutto cotto, friarielli dressing, ‘nduja mayo and caramelised onion; Manteca’s team will offer fried ciccioli with fennel kraut, apple mustard and fennel mayo on focaccia; The Camberwell Arms will present cold roast pork and tomato tonnato sandwiches; The Palomar will provide pastrami, Pantelleria capers, shifka and mustard aioli in za’atar focaccia; and Crispin will offer a Portland crab, confit fennel and lardo roll. Sweet options will also be available, with Toklas’ new head baker Ellie preparing an olive oil ice cream sandwich with rosemary biscuits. Drinks – including negronis, wine and beer – will be on offer.
