Madrid-based chef Juan D’Onofrio will bring his restaurant concept, Chispa Bistró, to London for a five-night residency at Carousel from 8th to 12th July. The visit marks the first international pop-up for D’Onofrio and his team, who aim to showcase a menu inspired by their Madrid establishment, adapted to British produce and Carousel’s network of local suppliers.

Fitzrovia venue Carousel conducts a regular series of rotating residencies, and has hosted over 350 chefs from more than 80 cities and 50 countries since its inception. The restaurant’s open kitchen allows visiting experts to collaborate with Carousel’s in-house team to create bespoke menus and wine pairings that reflect their culinary identity while incorporating local ingredients. The establishment has previously hosted chefs such as Jeremy Chan of Ikoyi, Santiago Lastra of Kol and Diego Rossi of Trippa in Milan, positioning itself as a platform for emerging and established culinary talent from around the world.

For his London debut, D’Onofrio has developed a multi-course tasting menu that reflects his culinary philosophy, combining elements of Spanish cuisine with international influences. Dishes on the menu include Burnt Tomato Water with Confit Tomato and Chimichurri Oil, Red Shrimp with Clarified Banana Broth and Palo Cortado and Grilled Ox Tongue served with oyster escabeche and parsley salad. There are further offerings such as smoked trout with vitello tonnato, veal sweetbreads with beurre blanc and anchovies, and a dessert of chocolate mousse with mushroom panna cotta and strawberries. The full menu will be served for dinner only, priced at £75 per person.

“I am very excited about this opportunity, where we will be presenting Chispa abroad for the first time,” said D’Onofrio in a statement ahead of the residency. Chispa Bistró, located in the Spanish capital, takes a contemporary approach to Mediterranean cuisine, with an emphasis on seasonal ingredients and innovative techniques. The upcoming London residency provides D’Onofrio with a chance to introduce his cooking style to a new audience, while working alongside Carousel’s experienced team.
