Chef Monica Galetti to open signature restaurant at new Samoa luxury resort

Chef Monica Galetti and her husband, sommelier David Galetti, are collaborating with Moanalei Villas, a new boutique resort near Apia, Samoa, to launch its signature restaurant, Tasi, in early 2026. The partnership, officially announced this week by the Samoa Tourism Authority (STA), aims to bring international culinary expertise to the South Pacific island nation while highlighting local ingredients and traditions.

Moanalei Villas is a luxury retreat located in the hill’s above Samoa’s capital, comprising seven architecturally designed villas scheduled to open alongside the restaurant. The resort plans to offer private infinity pools and a guest experience that blends cultural authenticity with upscale amenities. The new venue menu will focus on seasonal, locally sourced ingredients and reinterpret traditional Samoan flavours through a contemporary lens. In addition to her culinary leadership, Galetti will conduct training sessions with the kitchen staff to help establish their food philosophy. Caitlin Lei Sam, founder and designer of Moanalei Villas, commented on the partnership: “Partnering with Monica is a dream. Her culinary artistry and deep respect for her Samoan heritage align beautifully with our vision for Tasi – a restaurant that tells our story with elegance, authenticity and soul.”

Monica Galetti, familiar to UK foodies for her appearances on the BBC’s MasterChef: The Professionals and for her work in Michelin-starred kitchens in London, will lead the culinary direction at Tasi. She will work closely with Moanalei’s head chef and kitchen team over the coming year to develop the debut menu. “This is a collaboration that is very dear to me,” she says. “It’s a way for me to reconnect with my Samoan roots and share the skills and knowledge I’ve gained over the years. David and I are incredibly excited to work with the Moanalei team to create something truly special together.”

Hospitality director and experienced sommelier David Galetti will be responsible for overseeing service training and beverage curation. His role will involve developing a service style that reflects the resort’s emphasis on personalised experiences and high standards.

The Samoa Tourism Authority welcomed the development as a significant step in promoting the country’s high-end tourism offerings. “This exceptional partnership with Monica and David is a powerful statement about the quality and creativity that Samoa has to offer,” says Alison Cryer, managing director of STA’s European office. “It not only puts Samoa firmly on the global culinary map but also showcases the luxury side of our destination in a way that honours its people, heritage, and natural beauty.”

Tasi, which will offer panoramic views of the ocean and surrounding mountains, is expected to become a focal point of the Moanalei experience and a destination for international travellers and food enthusiasts.
