Chuck’s brings minimalist smashburgers to permanent home at No. 23 in Fitzrovia

Chuck’s, the burger concept created by chef Chuck George, will take up permanent residence at No. 23, the cocktail bar adjoining Carousel in Fitzrovia this September. The move follows several successful pop-up events at the venue and marks the brand’s first long-term location in the UK capital.

Originally launched in Milan in 2022, Chuck’s has since expanded to Paris, Rome and Madrid, gaining a following for its minimalist approach to the American-style smashburger. The London site will continue the brand’s “no modifications” philosophy, serving a standardised burger consisting of a single griddled beef patty, cheddar cheese, pickles, white onion and house sauce, all served in a potato roll. The concept, which George describes as “no faff”, is rooted in a belief that simplicity and consistency are key to a good burger. “If you told me there’d be a Chuck’s in London three years ago, I wouldn’t have believed you, but here we are,” says the chef. “I’m thrilled to be joining Ed and Ollie as co-inspirators in a permanent Chuck’s set within the townhouse walls of No. 23. Burgers and fries are coming this September.”

The menu at Chuck’s in Fitzrovia will also include seasoned fries, with other items such as fish sauce wings and a crispy chicken burger expected to be introduced in the future. The food will be served alongside the bar’s agave-focused cocktail menu, which includes drinks such as a tequila-based twist on the French 75 and a reimagined Manhattan using mezcal and sherry.

Carousel co-founder Ed Templeton commented on the collaboration: “Chuck instantly became part of the Carousel family when he first popped up with us last summer. We’re beyond happy that he’s joining us full time, and No. 23 really is the perfect fit. Who doesn’t want a peerless smashburger with their spicy marg?”
