Dal Fiorentino, an Italian sandwich shop founded by husband-and-wife team Andrei and Cristina, has opened its fourth London location in Holborn. The new site, which can be found at 20-23 Viaro House, is the brand’s largest branch to date. The shop continues the couple’s mission to bring the traditional Florentine flatbread, Schiacciata, to a wider London audience.

Originally launched in 2022, Dal Fiorentino already operates branches in Fitzrovia, Brick Lane and Hoxton. The Holborn site offers seating for up to 35 people and provides both dine-in and takeaway options. The menu features over 15 sandwich varieties, all made to order with ingredients prepared on-site daily.

Schiacciata, a flatbread native to Tuscany and Umbria, is a staple of Florentine cuisine. At Dal Fiorentino, the bread serves as the base for a range of fillings using ingredients such as San Marzano tomatoes, Buffalo Mozzarella, Parma ham, and house-made pesto: the focus is all on freshness and authenticity.

Among the popular meat-based (and must-haves) offerings are the Da Vinci, prepared with Mortadella, whole Burrata, pistachio pesto and extra virgin olive oil, and La Fiorentina, made with fennel salami, Pecorino cheese, truffle honey and olive oil. The names recall famous people (artists and writers) from the Tuscan region, but also play with one of the most famous literary works, La Divina Commedia. Purgatorio, Inferno and Paradiso combine different types of cheeses (buffalo mozzarella or gorgonzola), vegetable creams and charcuterie.

Vegetarian options include the Ginevra, with Buffalo Mozzarella, beef tomatoes, fresh basil and olive oil, and the Il Magnifico, which features whole Burrata, pistachio pesto, grilled courgettes and rocket. In the vegan selection, there is Giotto, with black olive spread, beef tomatoes, basil and olive oil.

In addition to sandwiches, the Holborn location includes a standalone coffee counter – with pastries including bombolone and cannoli filled à la minute – and serves charcuterie boards between 12 pm and 8 pm. A small selection of wine and beer is also available.

The expansion into Holborn reflects a growing demand for regional Italian cuisine in London. While Dal Fiorentino’s offerings cater to a variety of dietary preferences, the emphasis remains on showcasing traditional Tuscan flavours through simple, quality ingredients.
