Chef Jaime Pesaque unveils Yachay, a new creative culinary atelier in Lima

Peruvian chef Jaime Pesaque has announced the launch of Yachay, a new creative culinary atelier, with a presentation held this week. The initiative, based in Lima, Peru, aims to serve as a space for gastronomic innovation and research, bringing together chefs, industry professionals and food enthusiasts to explore new culinary concepts and techniques.
Pesaque, known internationally for his restaurants including Mayta in Lima and other ventures abroad, officially opened the new premises for the platform to foster creativity within the culinary arts. The establishment comes at a time when the Peruvian culinary scene continues to gain global recognition, with chefs like Pesaque playing a significant role in promoting the country’s cuisine. The atelier is designed not only as a test kitchen but also as a collaborative space for workshops, tastings and educational activities.
Yachay is expected to host regular events, including masterclasses, guest chef residencies and research projects focused on Peruvian ingredients in a space that will be open to both professionals and the wider public interested in culinary innovation. Pesaque explained, “Yachay is a place to learn, to experiment, and to share.
