GAIL’s Bakeries has recently launched its new Spring menu across its UK locations. The seasonal offering includes the return of customer favourites such as Hot Cross Buns, alongside several new sweet and savoury items, and a collection of limited-edition pastel tote bags. The menu update is intended to celebrate seasonal ingredients and flavours.

The Spring menu marks the reintroduction of GAIL’s Hot Cross Buns, which are available individually for £3.30 or in boxes of six for £14.00. The buns are made using heritage grains and contain candied peel, cranberries, and sultanas, spiced with cinnamon, mixed spice, and grains of paradise. Each bun is brushed with a syrup made from clove, star anise, and nutmeg. The use of heritage grains adds texture and depth to the buns while supporting sustainable farming practices and gut health.

The bakery is also releasing a set of four limited-edition pastel market tote bags, designed in partnership with Re-Wrap using regenerative organic cotton. The bags are embroidered with a hot cross bun motif and are available in green, orange, purple, and blue for £15.00 each, both online and in stores.

Among the new sweet items on the menu is a Malted Chocolate & Stout Cake (£5.40), made with Irish stout and topped with white chocolate and Irish cream frosting. The recipe calls for a maturation over 24 hours to enhance the cake’s malty and chocolate flavours. Another addition is the SB & J Filled Cookie (£4.30), which features toasted sunflower seed butter and raspberry jam, offering a peanut-free alternative to the classic peanut butter and jelly combination.

On the savoury side, the Taleggio & Mushroom Savoury Bun (£5.70) combines roasted mushrooms with cheddar béchamel and Italian Taleggio cheese, finished with honey and marjoram. Other new savoury options include the Ham, Cheese & Pickle Challah Knot (£8.20) and Avocado & Chickpea in Olive Oil Brioche (£3.60).

The updated drinks menu features a Turmeric Latte (£4.80), created in collaboration with Daily Dose, and a range of iced teas such as Elderflower, Cucumber & Iced Matcha Tea (£5.10), Sparkling Raspberry & Hibiscus Iced Tea (£4.70), and Darjeeling & Strawberry (£4.70).

Additional seasonal bakes comprise Hamentaschen (£3.20), Tahini Bites (£2.40), Pecan Crumb Cake (£5.00), and Carrot Cake (£4.90).
