Two-Michelin-starred restaurant Da Terra and UK-based speciality coffee company Difference Coffee have announced a collaboration to serve one of the rarest coffees ever offered in a fine dining environment. The special varietal, a nano-lot from Brazil’s Daterra Estate (not the same Da Terra!) will be available exclusively at the Bethnal Green restaurant from 2nd July, with limited quantities also offered through Difference Coffee’s online shop.

The coffee has been secured through Daterra’s Masterpiece Auction, a private sale showcasing experimental lots from the their research and development programme. The lot in question was the highest-scoring and smallest released through the auction, with only 19kg available worldwide. Coffees at this level are not produced commercially but rather as products of controlled experimentation, reflecting specific processing techniques developed by the producers. 

The Daterra property, located in the Cerrado region of Minas Gerais, is regarded as one of Brazil’s leading specialty coffee producers, known for its precision agriculture and rigorous quality control. Difference Coffee, which specialises in ultra-specialty single-estate coffees presented in capsule format, has maintained a longstanding relationship with the company and monitors its releases.

Bethnal Green restaurant Da Terra opened in January 2019 inside the Town Hall Hotel, earning its first Michelin star eight months later and a second in 2021. The establishment was ranked third on the National Restaurant Awards’ top 100 UK restaurants list in 2023 and reopened in October 2024 following a four-week refurbishment that included an extended open kitchen and a revised room layout.

For Da Terra’s chef patron Rafael Cagali, this collaboration carries personal significance owing to his Brazilian heritage. Both the restaurant and the estate share names derived from the Portuguese phrase meaning “from the earth”, reflecting a common emphasis on provenance. Cagali joined Difference Coffee founder Amir Gehl on the day of roasting, observing the process from green lot to finished product. The resulting cup has been described as featuring notes of dark cocoa, dried stone fruit and citrus-like acidity, with a mellow body and long finish.

“At Da Terra, we are always seeking ingredients that tell a story beyond the table setting of our restaurant. As a Brazilian, it’s wonderful to be able to offer such a rare lot that is so rich in history to all our guests,” Cagali said.

Gehl added: “This release is special not only because of the rarity of the coffee, but because of the collaboration behind it. To have the palate of a two-Michelin-starred chef involved in shaping how this coffee should taste is something extraordinarily rare. It was a genuine meeting of culinary and coffee craftsmanship.”

The special brew will be served as part of Da Terra’s coffee and tea list while stocks last.
