Original recipe of the week: Spiced Balsamic Bean and Fruit Salad

On first perception mixing fruit and veg is kind of weird, but once you taste them together I guarantee you will be shocked by its delight. Blackberries on pizza or watermelon in salad – the combinations are endless but delicious all the same. The peaches and strawberries in this salad add a much needed sweetness to the dish which you would normally get from an added salad dressing like caser or a vinaigrette. Sweet, spicy and nutritious; what more would you want?

Spiced Balsamic Bean and Fruit Salad

Serves: 1-2
Prep Time: 10-15 mins

What you will need:

2 peaches – sliced
1 avocado – in chunks
1 small can of black beans
1 tbs balsamic vinegar
5 large strawberries cut in half
1 handful of blueberries
1 handful of fresh kale roughly chopped
1/2 handful of coriander – finely chopped
Salt and pepper
1 jalapeño chilli
1 garlic clove
1 tbs crunchy peanut butter

What you need to do: 

1. Using a food processor mix the black beans, salt, pepper, jalapeño, peanut butter, garlic and vinegar. Give this a good pulse until the black beans are roughly chopped but all the ingredients are incorporated.

2. Now mix together the rest of the ingredients spooning the dressing over and mixing again and again until all of the dressing is covering the salad. If you like a little more crunch you can add some roughly chopped peanuts on top for something a little extra, or alternatively serve with some crisp bread or melba toast.
