Scottish chef Darren Ross will host a five-night residency at Carousel from 20th to 24th January this year for their Burns Night celebrations. He will present a menu inspired by his Scottish heritage and distinctive approach to open-fire cooking, bringing authentic flare to the occasion.

Ross, who recently led the kitchen at Inver, the Michelin Green Star restaurant located on the shores of Loch Fyne, has garnered recognition within the culinary world, including being named Young Scottish Chef of the Year in 2020. His work is defined by “a love for nature and his passion for open-fire cooking that define his simple, elegant, unmistakably Scottish approach”, with previous positions held at Mingary Castle and Inverlonan, both of which focus on local ingredients and innovative techniques. 

Carousel in Marylebone is known for its chef collaborations and pop-up dining experiences. This one will offer a modern take on traditional Scottish cuisine, presenting a menu that features dishes such as Haggis with a fermented potato scone dumpling and neep XO, Scallop with Whisky Ponzu and brown butter, and venison served with beetroot and coffee kombucha. 

Ross’s visit to Carousel offers diners a taste of contemporary Scottish cuisine and an opportunity to mark Burns Night with an alternative to the traditional supper. Bookings are open now.
