Original recipe of the week: A super food breakfast boost

When you are feeling weary and need something special to boost you, look no further.  Dairy free for those in favour (normal yoghurt can be used, of course) and full of natural anti-oxidants that will boost your mood let alone your well being, this breakfast alternative is sure to kick start your day. Whether suffering from a hangover, or simply feeling worse for wear, eat this and feel right as rain again in no time.

Breakfast is, as they say, the most important meal of the day, so why not super charge it:

Coconut – boosts metabolism

Pomegranate – great source of vitamins B and C

Blueberry – a high source of vitamin C and magnesium

Dairy free yoghurt and superfruit breakfast sundae

Serves 2

What you will need:

1 punnet of pomegranate seeds

1 punnet of blueberries

50g descanted coconut

A handful of mint leaves (chopped)

1 tub of dairy free yoghurt (soy or normal can also be used)

100g oat bran

4 tbsp manuka honey (runny if you prefer)

50g chopped walnuts

Method:

Nice and simple. All you need to do is mix the coconut, oat bran, yoghurt and mint in a separate bowl and layer into your serving bowl with layers of fruit, then yoghurt then fruit again and continue this until you have used everything up.

If you wish to be fancy you can alternate the fruits into separate layers, but if you’re feeling lazy, simply mix together and layer. Top with honey and walnuts – delicious and healthy.
