Andrew Wong, chef of two-Michelin-starred A Wong in Victoria, is set to welcome Albert Adrià to his restaurant for a special collaboration. The duo will deep dive into the art of Chinese dim sum, a culinary tradition known for its precision and craftsmanship. The collaborative dinners will take place on 7th and 8th July.

Wong, who has made a name for himself pioneering a new approach to Chinese cuisine, brings a unique mix of academic rigour and first-hand experience from kitchens across China. He sees parallels between the technique and skill required by dim sum chefs and their counterparts in fine European pastry.

Adrià, on the other hand, is a culinary innovator who revolutionised gastronomy with his brother Ferran at El Bulli, pushing the boundaries of all senses and securing for the restaurant the status of best in the world. The Catalan chef has since embarked on his own ventures, opening a series of critically acclaimed restaurants including Enigma in Barcelona. His fascination with the precision and intricacy of dim sum mirrors Wong’s interest in European pastry, setting the stage for a unique four-hand.

With only one sitting per evening, reservations are limited and are available for pre-purchase at £300 per person. This collaboration stands as a testament to the limitless possibilities when two masters of their craft come together. It’s a rare opportunity for food lovers to witness a unique blend of culinary traditions and cutting-edge techniques, delivered by two of the world’s leading chefs.
