Michelin-starred Behind to host Algarve chef João Oliveira for two seafood-driven dinners on 15 and 16 October

Andy Beynon and João Oliveira will collaborate for two back-to-back four-hand dinners on 15th and 16th October at Behind, the Michelin-starred restaurant in London Fields. The two chefs will explore and play with their British and Portuguese approaches to seafood, reflecting their own distinctive styles in what is set to be a truly exciting collaboration.

Vista is internationally renowned for the sustainability of its ingredients, from sourcing to gathering, which Oliveira dubs “sustainable Portugal”. His cuisine is carb- and gluten-free, honouring the flavours as well as the producers, with 95% of ingredients sourced locally, showcasing a perfect symbiosis between the produce of the land and sea.

The dinners will not only feature the signature dishes of both chefs but also introduce new ones that celebrate the shared values and ethos of both restaurants, all part of a ten-course tasting menu including meticulously crafted, sustainable seafood. Diners can expect dishes such as scallops with kombu dashi, seasonal flowers and charcoal oil; and tuna belly paired with Buddha’s hand lemon and winter scallion. The event is priced at £180 per person, excluding drinks, with reservations available through OpenTable.

This collaboration reinforces Beynon’s and Oliveira’s commitment to a cuisine that respects the sea and its sustainability. The dinners aim to offer an unforgettable experience for the guests, blending the best of Portuguese and British culinary seafood traditions under one roof.
