NoMad London to launch New York-inspired bistro, Twenty8 NoMad

NoMad London, the flagship hotel of the NoMad Hotels brand, will open a new restaurant, Twenty8 NoMad, on the 9th of May at its Covent Garden site, directly opposite the Royal Opera House. The bistro, inspired by the cuisine and culture of New York City, aims to bring a modern take on classic American dishes to central London, under the direction of Executive Chef Zak Gregoire and Culinary Director Bryce Shuman.

Twenty8 NoMad is located within the 91-room NoMad London hotel at 28 Bow Street, a building with a storied history as a former Magistrates’ Court and Police Station. The restaurant’s name, Twenty8, references both NoMad New York’s original address on 28th Street and the London hotel’s own street number.

The venue’s design, created by Martin Brudnizki Design Studio, seeks to reinterpret the traditional palm court with a more relaxed and contemporary atmosphere. Central to the dining room is a custom-built, eight-foot wood-burning hearth, while the décor features rattan, greenery, and a palette of earthy tones. The restaurant’s art programme pays tribute to Napoleon Sarony by including a rotating series of his portraits, including the one of Oscar Wilde, who was famously tried at the Bow Street court.

The menu, overseen by Chef Gregoire and guided by Shuman, draws on New York nostalgia and classic French brasserie influences. Dishes include Long Island Razor Clams, Seafood Towers, Grilled Bone Marrow with sourdough toast and plum, Galician Blonde Ribeye Bordelaise, Smoked Macaroni and Cheese, Baked Alaska, and Ice Cream Sundaes. The NoMad Chicken, served with black truffles and foie gras, continues a tradition from NoMad’s original New York outpost.

Shuman, who recently joined NoMad London as Culinary Director, said, “Working under the roof of NoMad feels a lot like coming home. I am honoured to join my talented and inspiring colleagues here in London, to bring my slice of New York to one of the world’s most exciting culinary capitals. Nothing brings me more joy than cooking with the finest ingredients, with the greatest tools, and with the greatest people. It is electric.”

The bar programme is led by Leo Robitschek, Vice President of Food & Beverage at Sydell Group, who has curated a cocktail list tracing the evolution of the martini and other New York classics. The wine list, managed by Wine Director Alessia Farrarello, offers a selection of half-bottle carafes and a focus on Nebbiolo.

It brings me great joy to open a restaurant that embodies these principles in a building where, for too long, they were absent.”
