Taz Sarhane and René Stein to host collaborative caviar dinner at Cycene in Shoreditch

On Sunday 7th September, the Michelin-starred Cycene in East London will host a one-night-only collaborative culinary event featuring the talents of Taz Sarhane and René Stein. Organised by N25 Caviar, the evening will bring together Sarhane, recently appointed head chef at the restaurant, and Stein, of Michelin-starred Tisane in Nuremberg, for an intimate 20-seat dinner focused on seasonal ingredients and the use of caviar.

At the Shoreditch venue, guests will begin by being greeted by the chefs, before moving to the downstairs bar for a caviar masterclass led by Jason Hillis, UK business development manager at N25 Caviar. Hillis is expected to offer insights into the production and selection process for the product, which is sourced from aquaculture facilities in China and aged using proprietary techniques. Following the masterclass, attendees will be served a collaborative tasting menu created by Sarhane and Stein, incorporating four different species of caviar. 

The event offers an opportunity for diners to enjoy a joint offering from two Michelin-starred experts in an exclusive setting. Sarhane, who joined Cycene in August last year, has emphasised his interest in British produce and preservation techniques, aiming to “capture moments in time through food. Meanwhile, Stein, known for his purist approach across the US and Germany, operates Tisane as an intimate Chef’s Table venue with a focus on singular ingredients and refined execution. Their special menu aims to blend their individual culinary styles – Sarhane’s seasonal, ingredient-led approach and Stein’s minimalist, flavour-focused technique – to reflect their shared philosophy of simplicity and respect for produce.

Hermes Gehnen, founder of N25 Caviar, commented on the collaboration: “Taz and René are big believers in simplicity and seasonality. Both are equally driven by quality ingredients and drawing out maximum flavours through their distinctive techniques. We’re very excited for the two chefs from different countries to come together.”
