Jordan Bailey will open a new branch of his burger restaurant, Heard, in Soho this September. Located at 31 Foubert’s Place near Carnaby Street, this marks the second permanent site for the brand, following its debut in Borough earlier this year. The expansion comes after a successful transition from food truck to bricks-and-mortar, with the new location introducing an expanded menu and new burger concept.

The Soho venue is arranged over two floors with interiors created in collaboration with Superfutures, whose previous projects include Barrafina and Chotto Matte. The design incorporates natural materials, green micro-cement walls and an open kitchen, aiming to balance sophistication with a relaxed atmosphere. At the new location, the team will debut the Soho Burger, a non-smash style burger featuring a 155g patty made from a blend of chuck, brisket and rib cap. It is topped with melted Gruyère, caramelised onion, thyme, watercress, mustard mayonnaise, tarragon and chopped cornichons. A pink peppercorn sauce is served on the side, and shoestring fries will be added inside the bun for extra texture. Drinks will continue to play a central role: the wine list has been curated by Bailey’s wife, Majken Bech-Bailey, a sommelier known for her work at Henne Kirkeby Kro in Denmark and at Aimsir. The list includes low-intervention wines, craft beers from London’s Forest Road Brewery and non-alcoholic options such as Bæk, a wine alternative created by Majken herself.

Acclaimed chef Bailey, who previously led the two-Michelin-starred Aimsir in Ireland and worked at the three-starred Maaemo in Oslo, brings a fine dining background to what he describes as “elevated comfort food”. Heard’s menu focuses on high-quality ingredients and precise preparation techniques, with an emphasis on British produce. The restaurant sources its beef and other produce from UK farmers and suppliers, focusing on sustainability and flavour. Bailey explains: “Heard is about taking the best ingredients and doing as little to them as possible to let them shine.”
