Berry supplier Driscoll’s and London dessert shop Mello are serving a transparent strawberry tart at Mello’s Seven Dials Market shop in Covent Garden this weekend – a two-day addition to a summer-long collaboration built around British strawberry season. The wider limited-edition menu has been available since 1st July and runs till the end of August, developed jointly by the two brands, prepared daily by Mello’s pastry team and available only at the Seven Dials Market venue.

The Driscoll’s x Mello Clear Strawberry Tart is the result of a technique that converts Driscoll’s strawberries into a clear jelly with a flavour like strawberry laces but without any colour. The confection is served on top of a Strawberries and Mello Crème cup, which pairs fresh berries with the shop’s whipped cream. Techniques for clarifying fruit juices and setting them into transparent gels have been all the rage in pastry kitchens in recent years, often using agar or gelatine alongside filtration to remove the pigments and solids that would otherwise cloud the mixture.

Also starring in the collaborative line-up is the Driscoll’s Eton Mess, a version of the traditional British dessert that combines strawberries and Mello’s crème with macerated strawberry sauce, sponge fingers, Chantilly crème and meringue shells flavoured with Szechuan peppercorn. Strawberries also feature in the shop’s signature cup desserts, which customers can order with a range of toppings. The Mello Crème version, which combines strawberries with whipped cream and a handmade crumble, is priced at £7.95. Others come in the form of Caramelised Milk Chocolate (£9.95), Salted Butter Chocolate Mousse (£10.95) and Golden Vanilla Ice Cream (£11.95).

Driscoll’s is one of the largest berry suppliers in the UK market, while Mello has built an online following for visually distinctive handcrafted desserts. The two explain they are “united by a passion for exceptional flavour and devoted to making this the most delicious summer yet”.
