Decimo launches La Mesa guest chef series at The Standard

Decimo has announced the launch of La Mesa, a new guest chef dinner series. The initiative, which begins on the 17th June, aims to bring together acclaimed chefs from the UK and abroad for collaborative, one-night-only events that explore the intersection of different culinary traditions. The first dinner in the series will see Susan Kim, founder of New York City’s Korean-American pop-up Doshi, and Songsoo Kim, Head of Sourcing and Development at London’s Super 8 group, joining Decimo’s Head Chef Paola Arenas in the kitchen.

The La Mesa series, which translates as The Table, is designed to showcase a diversity of cooking styles and cultural backgrounds, with each edition featuring a new guest chef working alongside Meléndez on an open-fire-led menu.

For the inaugural event, the collaborative menu will explore the connections between Korean and Mexican cuisines, both of which are known for their use of fermentation, spice, and deep-rooted family traditions. Dishes on offer will include Scallop and Melon Aguachile with jalapeño, Tofu Skin Salad with wood ear mushroom and hot mustard, and Red Mullet a la Talla. Sides will feature kimchi, salsa verde, pickles, masa tortillas, perilla leaves, and bibb lettuce. Dessert will be Horchata Shaved Ice with strawberries and cereal candy. 

As part of the launch, Decimo is also introducing a special guest taco to its Lunch Taco Menu: Gochujang Short Rib with sesame slaw and pickled daikon. This dish will be available for a limited time alongside regular menu items such as Pork Al Pastor, Octopus and Paprika, Mushroom and Manchego, and Beef Short Rib Barbacoa, with tacos starting from £7.50 each. The lunch menu is served Fridays to Sundays from 12pm to 2.30pm, and includes a £5 Lunch Paloma cocktail.

Decimo is located on the 10th floor of The Standard, accessible via an exterior red lift with panoramic views of the city. The hotel is housed in the former Camden Town Hall Annex, a 1974 Brutalist building in King’s Cross, and is home a range of food and drink venues.

Future editions of La Mesa will continue the theme of international collaboration, bringing together chefs from around the world to create menus focused on bold flavours and open-fire cooking.
