Michelin-starred Bristol restaurant Wilson’s will join forces with Hackney’s low-waste spot Papi for a collaborative dinner on 26th June. The event at the London Fields restaurant brings together two teams who focus on sustainability and seasonality, serving a one-night menu that highlights English summer produce and natural wines.

Head chef and co-founder at Wilson’s, Jan Ostle will work alongside Papi’s Matthew Scott to (also chef and co-founder) to deliver a menu reflecting both kitchens’ philosophies. The dinner will be served à la carte, offering a selection of snacks and sharing plates. Dishes will include Poached Oyster with Vin Jaune and Elderflower and Bread and Homemade Butter from Wilson’s Bread Shop, as well as larger plates such as Burnt Suyo Cucumber with Shiitake Garum and Crème Crue, White Radish with Crab Sauce and Fermented Chilli and Roebuck and Mangalitza Kofta with Elderberry Sauce. For dessert, the chefs have chosen to serve a version of the classic childhood treat, jelly and ice cream.

The drinks for the evening have been selected by Papi’s co-founder Charlie Carr, who has assembled a list of English natural wines and ciders from small producers. There will be options from Ripe Cider in Cornwall and Sophie Evans Wines in Kent, reflecting the event’s emphasis on local and sustainable sourcing.

Wilson’s, led by Mary Wilson and Jan Ostle, operates with an almost entirely self-sufficient approach. Mary Ostle manages the restaurant’s two-acre market garden, which supplies much of the produce used in the kitchen. It was awarded its first Michelin star earlier this year, adding to the green Michelin star it received in 2022, making it “the first and only restaurant in Bristol to hold both prestigious accolades”.

Papi opened in 2023 following a series of pop-ups, and was noted for its zero-waste ethos and attention to lesser-known natural wines, resulting in accolades including Best New Opening in London by Condé Nast Traveller and a spot on Square Meal’s 100 best restaurants in London.
