Saransh Goila will be hosting a one-off brunch tasting menu at Darjeeling Express this Sunday. The event is a collaboration between the Mumbai-based chef and Asma Khan, who heads up the kitchen at the London venue. It will feature family-style offerings inspired by Goila’s travels across India, aiming to showcase the country’s regional cuisine.

Goila, founder of the Goila Butter Chicken restaurant in Mumbai, has based the menu on dishes he discovered during a 20,000km journey through 60 cities in India. Priced at £45 per person, it will offer diners an opportunity to experience a range of flavours and ingredients less commonly found in British Indian restaurants.

The meal will begin with a series of snacks, including Double Mango Pan Puri, a Mumbai street food dish made with Alphonso mangoes, which are currently in season. Other starters include Salmon Sol Kadi Ceviche – salmon marinated in kokum and coconut in the style of Maharashtra, with a vegetarian alternative using avocado. The first course concludes with 15-Hour Aloo Tuk, a double-fried potato dish from Sindhi cuisine.

For the second course, Goila will present a reinterpretation of the traditional Indian stew Nihari, combining it with elements of Japanese ramen. The dish will be available with mutton or as a vegetarian Sindhi Kadhi. The centrepiece of the meal will be the chef’s Butter Chicken, described as a “smoky signature take on the classic Indian dish”, served alongside Dal Makhani, sourdough naan and pickled onions. A vegetarian option will substitute paneer for chicken.

Dessert will be a Tender Coconut Sundae, consisting of coconut payasam, fried coconut, coconut ice cream and mixed nuts.

The event marks a rare UK appearance for Goila, whose eponymous butter chicken has achieved cult status in India. The brunch aims to highlight the diversity of Indian cuisine.
