At Michelin-starred restaurant Gabbiano 3.0 in Marina di Grosseto, Tuscany, sommelier Marco De Signoribus has introduced a new drinks pairing experience titled I Viaggi di Marco (“Marco’s Journeys”). Launched this summer, the seven-part itinerary integrates wine, cocktails and fermented drinks in a bid to challenge conventional pairing norms and complement the restaurant’s tasting menus, curated by chef Alessandro Rossi.

The sensory experience offers an alternative to traditional wine pairing by incorporating a variety of beverages served in unconventional ways, such as using atypical glassware and varied serving temperatures, with the intention of enhancing the flavours of each dish. “We wanted to create a food and wine journey that alternated expressive peaks with moments of lightness,” said De Signoribus. “From the rare rosé sake served chilled at the start to the red wine served in a young white glass, each choice is designed to highlight secondary aromas and unexpected pairings.”

The initiative aligns with chef Rossi’s broader culinary vision, which blends contemporary techniques with regional traditions. His current summer tasting menus –  S’Ode Ancora il Mare (“The Sea Can Still Be Heard”) and Traversando la Maremma Toscana (“Crossing the Tuscan Maremma”) highlight local ingredients such as Tuscan red prawns, Maremmana beef and Orbetello eel. These are prepared using methods such as cold smoking and barbecuing to preserve and accentuate their natural flavours. “We wanted to inaugurate the summer gastronomic journey by evoking the idea of a stroll through the garden,” Rossi explained. “A metaphor that takes shape with the amuse-bouche and continues in the appetisers, where memories of summer are amplified through the flavors of seasonal vegetables like tomatoes, eggplant, zucchini, lettuce and cucumber.”

Gabbiano 3.0 is part of a larger hospitality group in Marina di Grosseto that includes the Gabbiano Steakhouse, Il Gabbianino cocktail bar and the Gabbiano Azzurro beach club and restaurant. Each establishment shares a culinary philosophy rooted in local identity, while offering varied dining experiences. The group’s founder, Marco Tomi, has aimed to create a cohesive yet diverse hospitality offering along the Tuscan coast, with Gabbiano 3.0 at its culinary centre.
