Three-Michelin-starred restaurant Zén Singapore has launched its new summer menu, a seasonal nine-course tasting experience designed by executive chef Martin Öfner in collaboration with Swedish chef Björn Frantzén. The updated selection incorporates a blend of Nordic, Japanese and Asian culinary influences, and highlights the use of seasonal ingredients sourced from Europe and across the Eastern continent.

Zén is the Asian counterpart to Stockholm’s Frantzén, which also holds three Michelin stars. The Singapore outpost is known for its interpretation of Nordic cuisine, enhanced by Japanese techniques and regional Asian ingredients. This latest offering features a combination of reinterpreted signature dishes and new additions, among them Crustacean Tartlets with Thai Basil, and a Chawanmushi incorporating awabi (abalone), foie gras and matsutake mushrooms. The meal concludes with a dessert made from Okinawan sweet potato ice cream, chestnut honey, slow-roasted pineapple and mezcal caramel.

Öfner, who has worked alongside Frantzén for more than ten years, took the helm at Zén in 2023. His latest menu is described as a reflection of his culinary vision and technical approach, intended to “represent a new expression of Zén: elevated, focused and deeply personal, while remaining rooted in tradition, craftsmanship and excellence”. It is available for dinner from Tuesday to Saturday, with a shorter lunch menu offered on the same days. The tasting menu is accompanied by a selection of canapés and is designed to embody the restaurant’s continued emphasis on seasonal gastronomy and cross-cultural culinary techniques.
