Robert Khaing brings Burmese-Thai flavours to Godet wine pub for September residency

Chef Robert Khaing will be taking over the kitchen at Essex Road wine pub Godet from 10th to 28th September, with a guest menu inspired by his Burmese and Thai heritage and his background in Michelin-starred kitchens. The temporary takeover is part of Godet’s ongoing guest chef series, aiming to showcase diverse culinary talent in a casual pub setting.
Khaing, who was born in Burma (Myanmar) and raised in Thailand, moved to the UK at 18 to study engineering before pursuing a career in professional kitchens. He has since worked at several high-profile London restaurants, including Kitchen W8, La Dame de Pic and Angler. In November 2023, he launched his first pop-up at Ken’s and has since hosted events at venues such as Jazu and Loop, gaining attention for his distinctive South East Asian-inspired cooking.
Godet, which opened in October 2023, occupies a renovated Victorian pub and offers a mix of low-intervention wines, craft beers and music from vinyl DJs. Khaing’s menu at the venue will incorporate seasonal British ingredients with flavours from across South East Asia. It will promote dishes such as Venison Tartare, Caramelised Onion Emulsion, Toasted Rice and a Burnt Aubergine served with pon ye gyi – a Burmese fermented bean paste – and flatbread. Other offerings include “Zaab” Fried Chicken Wings with tamarind and plum sauce, Roasted Monkfish, Mussel Mohinga, Balachaung and sticky rice with poached pears and coconut cream.
Khaing says his training in fine dining kitchens has shaped his approach to food. “The precision and technique I learned at places like Kitchen W8 and La Dame de Pic allow me to execute my own dishes with the same attention to detail,” he explains. His residency at Godet will offer service from 5pm to 10pm on Wednesdays to Fridays and from 3pm to 10pm on weekends.
