Liverpool Street Chop House & Tavern opens, reimagining Conran’s legacy in City of London

City of London has a new restaurant: Liverpool Street Chop House & Tavern opens on 17th September, bringing traditional British fare to cityworkers, locals and tourists alike. The launch by the Evolv Collection, led by CEO Martin Williams, marks the first in a series of three new venues under the Chop House & Tavern brand and represents a reimagining of the late Sir Terence Conran’s original hospitality vision. The Liverpool Street location will be followed by openings in Butler’s Wharf and Paternoster, establishing a unified identity for the brand across the capital.

The new concept draws inspiration from the traditional taverns and chop houses of 17th and 18th century London, with interiors designed in collaboration with brand strategist Ron Cregan for an aesthetic that features dark wood, rich tones, white linens, and brass and gold accents. The design also includes mirrors etched with references to the City of London’s historic trade guilds, such as the Cutlers.

Chef Mike Reid, who has trained at establishments including Le Gavroche and Restaurant Gordon Ramsay, has developed a menu that blends historical British recipes with contemporary techniques. Dishes include a Pea Soope (developed from a 1669 recipe), Lamb Barnsley Chop with Anchovy Dressing and Beef Shin & Oyster Suet Pudding. Sharing platters such as Pigs Head and Roast Chicken Pie also feature on the menu. The restaurant offers a curated oyster selection, some served with beef consommé and horseradish, and a range of premium steaks sourced from The Ethical Butcher, where all meat comes from British farms practising regenerative agriculture.

Additional features of the venue include an 80-bin wine list, an extensive beer selection including Guinness served in traditional tankards, and a cocktail menu aimed at the City crowd. Guests will also be able to choose from six handcrafted steak knives made by Blenheim Forge in Peckham.
