Silo and Lorto to unite for zero-waste culinary event in Piedmont this November

London’s zero-waste pioneer, Silo will collaborate with Lorto, the experimental restaurant at Nordelaia hotel in Piedmont, Italy, for a two-night culinary event in November. The four-hands dinner will feature Silo’s executive chef Will Stoyle and Lorto’s resident chef Charles Pearce – both notable for for their commitment to sustainable and low-waste gastronomy.

The collaboration marks the final event in Lorto’s 2025 chef pop-up series, bringing together shared philosophies of plant-forward, whole-ingredient cuisine. The menu is expected to reflect this ethos, combining Pearce’s use of local produce and seasonal vegetables with Stoyle’s expertise in fermentation and closed-loop cooking.

Founded in Brighton in 2014 by Douglas McMaster, Silo is widely recognised as the world’s first zero-waste restaurant. It later relocated to Hackney Wick, London, where it continues to serve a frequently changing tasting menu featuring in-house ferments, hand-milled flour, and a root-to-leaf approach, becoming known for dishes such as a waste-defying Quaver and Siloaf Ice Cream Sandwich. Stoyle joined in 2022 with a background that includes training at Le Manoir aux Quat’Saisons and Hélène Darroze at The Connaught, this year winning the Copa Jerez Best Chef award.

Meanwhle, Lorto opened in 2021, located at Nordelaia, a 12-room boutique hotel set on five hectares of agricultural land. Pearce’s kitchen sources ingredients from an on-site garden developed in collaboration with regenerative agriculture specialists La Rapa Bendata. The garden follows a closed-loop model, using compost from the kitchen to fertilise the soil and growing native Piedmontese varieties in line with Slow Food principles.

Award-winning sommelier Zoe Donadio will join the event to curate a wine pairing for the dinner. Donadio, formerly with Apricity and La Cave at The Hoxton, focuses on organic and biodynamic wines, on this occasion curating a list that “works with growers who prioritise biodiversity and soil regeneration in their respective regions, and let the grapes speak for their terroir, with as few additions and subtractions as possible”.
