Chef Keshia Sakarah brings Caribbean flavours to new residency at The Pilgrm Hotel in Paddington

The founder of Caribbean food venture Caribe, Keshia Sakarah will take over the kitchen at The Pilgrm Hotel in Paddington, as part of the hotel’s chef residency series. Running from the end of October till mid December, the residency will showcase the chef’s diverse West Indies-inspired menu, marking the latest instalment in The Pilgrm’s initiative to highlight emerging culinary talent and the wide range of food cultures across the UK.
The residency follows the hotel’s previous collaboration with Mary San Pablo’s Filipino pop-up, Luto, and continues their commitment to platforming underrepresented cuisines. Sakarah, who is also a published author, will offer a menu of small plates and mains rooted in the traditional flavours and ingredients of the Caribbean. A curated cocktail menu has also been developed in partnership with Kromanti Rum – a brand known for its similar heritage – alongside wine pairings selected by The Pilgrm’s wine writer in residence, Fiona Beckett
Dishes on the menu include Saltfish Accra and Corn Fried Chicken Wings, which are brined for 48 hours and served with a molasses BBQ glaze. Mains feature Curry Goat slow-cooked with coconut and amchar masala, Oxtail braised with soy, pimento and butter beans, and Fried Snapper. For dessert, guests can expect Cassava Pone and Nutmeg Ice Cream. Speaking about the residency, Sakarah said: “I’m excited to bring the bold, soulful flavours of the Caribbean to The Pilgrm. This is a chance to share the dishes I grew up with and reimagine them in a fresh, contemporary way.”
