London-based restaurants Crust Bros and Brother Marcus have announced a limited-time culinary collaboration, launching this autumn. From 16th October to 24th November, Crust Bros will serve a new pizza featuring Eastern Mediterranean flavours that has been developed in partnership with Brother Marcus, available across all Crust Bros locations in the capital.

The collaboration brings together Crust Bros’ Neapolitan-style artistry with Brother Marcus’s culinary influences. The resulting dish, referred to as the Ultimate East Med Pizza, combines ingredients and techniques from both brands. It features a charred, leopard-print crust topped with harissa tomato sauce, lamb kofta, caramelised onions with pomegranate molasses, fior di latte cheese, whipped lemon feta, Aleppo chilli butter, pomegranate seeds and pistachios. It is served with a side of tzatziki dip. A vegetarian version is also available, substituting the lamb kofta with Aleppo butter-roasted aubergine.

The collaboration reflects a growing trend in the London food scene of cross-restaurant partnerships and fusion dishes. Crust Bros, known for its customisable Neapolitan pizzas, has won the National Pizza Award twice and recently opened a flagship location in Covent Garden. Brother Marcus, founded by Tasos Gaitanos and Alex Large, draws inspiration from their travels across the Eastern Mediterranean and focuses on mezze-style dining and East Med hospitality. They describe the result of their combined expertise as a “rich, vibrant and unforgettable pizza experience”.
