Mauro Colagreco, chef of the three-Michelin-starred Mirazur in Menton, France, will mark its 20th anniversary with a special retrospective menu curated by renowned Spanish chef Ferran Adrià. The commemorative selection will be available to diners from 1st April to 3rd May 2026 at the restaurant, which is located on the French Riviera near the Italian border. The initiative aims to reflect on two decades of culinary evolution and creative exploration at one of the world’s most celebrated dining establishments.

The collaboration between Colagreco and Adrià represents what is described as a unique curatorship, with the latter examining the history and development of Mirazur’s cuisine. The former head of the now-closed elBulli – five-time winner of the World’s Best Restaurant – will act as creative director for the project. He is currently studying the restaurant’s culinary archive in order to identify key milestones, techniques and transformations that have defined its development “with an amused yet analytical eye, at the crossroads of art and knowledge”. His involvement celebrates a longstanding friendship with Colagreco and aims to support the next generation of chefs through donations to the elBullifoundation, which he founded following elBulli’s closure in 2011.

The resulting menu will be a temporary installation, billed as a retrospective of Mirazur’s gastronomic identity, incorporating ingredients and influences from its surrounding environment. Colagreco, who has led the restaurant since its opening in 2006, takes pride in an environmentally conscious approach, and his establishment is certified as both Plastic Free and B Corp, sourcing much of its produce from its own permaculture gardens. The occasion will also pay homage to the legacy of French fine dining, with references to historical figures such as Auguste Escoffier and Antonin Carême, as well as the innovations of nouvelle cuisine. According to the organisers, the project is intended not only as a celebration of the past, but also as a reflection on the future of gastronomy.

The menu, priced at €530 per person, will be accompanied by optional wine pairings ranging from €350 to €950, including a 2006 vintage set marking the restaurant’s inaugural year. While Adrià will not be present every day, he is expected to make appearances on select occasions. Reservations are open now.
