The Palomar launches first guest chef pop-up series to spotlight new culinary talent in Soho

The Palomar in Soho will launch its first-ever guest chef pop-up series this February and March, marking a significant change in its decade-long history. The initiative will feature a rotating line-up of emerging chefs preparing special dishes for one night only, alongside the regular à la carte menu overseen by head chef Dan Murray. The aim is to spotlight new talent in London’s culinary scene and will take place at The Palomar’s location on Rupert Street.

The series will begin on Monday 23rd February, with chef Michael Bagnall, whose background includes working at venues such as Brunswick House and Dudley’s, as well as hosting pop-ups at Bangkok’s Chenin and several London establishments. Bagnall’s special menu for the evening will feature three dishes: a crispy Foie Gras Nugget with Pickled Kumquat, Smoked Swordfish with Sea Herbs and a Mascarpone and Spent Coffee Caramel Tartlet for dessert.

The next event, scheduled for 9th March, will feature Millie Lagares, a chef and cookbook author recently named one of Time Out’s Best Young Chefs in London. Lagares, who divides her time between London and Tokyo and is known for pop-ups in both cities, will present dishes influenced by her Japanese heritage. Her menu will include Raw Tuna with Ponzu, Olive Oil and Lemon Zest Topped with Shiso Flowers, as well as a Shio Koji Marinated Chicken Thigh with Grilled Shallots and Miso, Butter and Walnut sauce and a Mizuna Salad with Radishes, Blood Orange and Japanese Onion Dressing. For dessert, guests can expect Toasted Vanilla and Malt Ice Cream with Hojicha Biscuit. A kumquat martini, garnished with the fruit, pickled, will also be available.

Founded by siblings Zoë and Layo Paskin, The Palomar has become a notable presence in London’s dining scene since its opening nearly ten years ago. The restaurant, which holds a Michelin Bib Gourmand, has a menu that is influenced by the cuisines of Southern Spain, North Africa and the Levant, served in an open kitchen bar setting.

Further guest chefs are expected to be announced in the coming weeks, with the series planned to become a regular fixture. Bookings can be made through The Palomar’s website.
