Neapolitan pizza group Crust Bros has partnered with Richard Corrigan’s modern Irish restaurant Daffodil Mulligan to create a limited-edition Guinness rarebit and sugar pit-cured bacon pizza, available throughout April and priced at £17.90. And for every pizza sold, £1 will be donated to the Irish Youth Foundation, of which Corrigan is a patron.

The collaboration brings together two brands with shared interests in provenance and technique, with the aim of reinterpreting Irish culinary traditions through the medium of Neapolitan pizza. Their creation is built on Crust Bros’ freshly prepared dough, baked to produce their characteristic charred, leopard-spotted crust. It is topped with a Guinness rarebit base, bacon cured in sugar that’s sourced from Northern Irish butcher Peter Hannan (who also supplies Fortnum & Mason), spring onions, chives, a drizzle of Guinness BBQ Sauce and shaved Coolea cheese. The result draws directly from the flavour profile associated with Daffodil Mulligan, which has built its reputation around fire-led cooking and the use of quality British and Irish produce.

Daffodil Mulligan is located just off the Old Street roundabout and is led day-to-day by head chef Fiona Hannon, who has worked alongside Corrigan for more than 20 years. The restaurant draws on the convivial atmosphere of traditional Irish shebeens and focuses on whole cuts of fish and meat cooked over embers. Meanwhile, two-time National Pizza Award-winning group Crust Bros have recently opened their largest site to date in Covent Garden, with 135 covers across two floors.

The special pizza is available until the end of April at all Crust Bros venues during regular opening hours: 11.45am till 10.30pm on Monday and Tuesday, 11pm Wednesday to Saturday and 10pm on Sundays.
