Kokum restaurant launches hands-on Indian cookery class series in East Dulwich
East Dulwich Indian restaurant Kokum has launched a new series of monthly cookery classes, running from April through to August this year, offering participants the opportunity to learn a range of Indian cooking techniques under the guidance of head chef Sanjay Gour.
The classes, which begin this Saturday, take place at the restaurant’s premises, and are scheduled to run on selected Saturdays for the summer. Each three-hour session focuses on a distinct area of Indian cuisine, from foundational curry-making to bread, street food and outdoor grilling.
Gour brings considerable professional experience to the sessions. Having grown up in Mumbai, he moved to London and went on to work at several Michelin-starred establishments, including Gymkhana and Murano by Angela Hartnett, where he was involved in the opening. He now leads the kitchen at Kokum, which has built a following in south-east London since it first started welcoming diners in 2023.
The five cookery classes span a broad range of techniques and styles. The opening session, Curry from Scratch: No Jar, No Paste, No Nonsense, focuses on producing a traditional on-the-bone chicken curry, with attention given to balancing spice, heat, acidity and sweetness without relying on pre-made pastes or sauces. The following session, Naan Stop: An Indian Bread Workshop, covers the preparation of naan, roti and charred flatbreads.
Third on the programme is Build Your Own Street Food Feast, introducing participants to dishes including chaat bowls, pani puri, Bombay toasties and vada pav, alongside techniques for making chutneys and layering flavours. The final two classes, both under the Kokum Summer Grill-Out banner, are designed around outdoor cooking and focus on live fire techniques, covering topics such as grilling meat, fish and wings with smoky, spiced flavours.
All sessions run from 2pm, with the majority finishing at 5pm. Following the cooking for each class, participants will sit down together to eat the dishes they have prepared, and each will receive a goodie bag containing ingredients and essentials intended to help them recreate the dishes at home.
The scheduled class dates are as follows:
25th April – 2pm-5pm
30th May – 2pm-4.30pm
27th June – 2pm-5pm
18th July – 2pm-5pm
29th August – 2pm-5pm
Ticket prices vary by class and can be booked via the restaurant’s website.
