Pizza Pilgrims launches Italian-inspired salad range for summer menu across UK locations

Neapolitan pizza group Pizza Pilgrims has introduced a new range of four salads across its UK restaurants this summer, designed to be served alongside its pizzas as part of a sharing-style menu. The range, inspired by Italian dining traditions, is available now at the brand’s 26-plus pizzerias across the country, including locations in London, Cardiff, Edinburgh, Manchester and Birmingham.

The four new dishes are Rocket & Parmesan, which combines rocket leaves with parmesan shavings, olive oil and lemon; Napoli, described by the company as a Greek-style salad made with ricotta salata and Piennolo di Vesuvio tomatoes; Italian Bean, featuring cannellini beans, red onions, Piennolo di Vesuvio tomatoes, garlic oil, red wine vinegar and basil; and Cavolo Nero Caesar, which pairs cavolo nero leaves with Caesar dressing, fried breadcrumbs and parmesan shavings.

Each salad is priced at £7.25 and features ingredients sourced from Italy, including several products carrying DOP (Denominazione di Origine Protetta) status. Among the imported components are Parmigiano Reggiano DOP, Piennolo di Vesuvio tomatoes, ricotta salata, cannellini beans and cavolo nero.

The range is built around a formula of fresh vegetables, olive oil and acidity, and is intended to provide a lighter accompaniment to its pizza offering. Pizza Pilgrims has suggested a combination of one pizza and two salads as a recommended order for groups.

The launch reflects a broader push by the group to align its menu with the Mediterranean tradition of shared eating. The brand has positioned the salads as complementary to its existing Neapolitan pizzas rather than as standalone main courses.

Pizza Pilgrims was founded in 2011 by brothers James and Thom Elliot, who travelled 4,500km from southern Italy to London in a three-wheeled Piaggio Ape van, learning about Neapolitan pizza-making along the way. The pair began trading at Berwick Street Market in London before opening their first permanent site in Soho in 2013. The business has since expanded to more than 26 pizzerias across the UK.

In 2023, the founders returned to Naples on a Vespa, documenting the trip in the YouTube series Pilgrimage II. The company achieved B Corp certification in 2024. A new cookbook, Pizza Napoli, featuring recipes and stories from Naples, is due for publication in 2025.
