This Wednesday, chef patron Isaac McHale of The Clove Club in Shoreditch will host a one-night-only four-hands dinner with Julien Royer of Singapore’s three Michelin-starred restaurant Odette, bringing together the two internationally recognised chefs for a collaborative menu combining signature dishes from both establishments with newly created courses. 

The evening unites two restaurants with distinct culinary identities and considerable international standing. Odette, currently ranked 19th on Asia’s 50 Best Restaurants list, celebrates Royer’s French cooking, drawing on high-quality produce and incorporating µ≤ subtle Asian influences. Named after the chef’s grandmother, the restaurant has held three Michelin stars and remains one of the most highly regarded fine dining destinations in Southeast Asia.

The Clove Club, located in Shoreditch Town Hall, holds two Michelin stars and has built an international reputation for McHale’s modern British cuisine, which is built around seasonal ingredients sourced from across the British Isles. The restaurant has appeared on The World’s 50 Best Restaurants list on multiple occasions since opening in 2013.

The menu for the special dinner will feature signature dishes from both kitchens, alongside a small number of new courses created specifically for the collaboration. Diners will be served Odette’s Kampot Pepper Crusted Pigeon, one of Royer’s best-known dishes, as well as the Clove Club’s Cornish Crab Dumpling Hot and Sour Soup. Among the newly developed courses is a Crisp Pork Jowl with Blood Sausage, White Kimchi and Japanese Quince, which reflects the cross-cultural approach of both chefs.

Four-hands dinners, where two chefs present a single menu prepared in one kitchen, have become an increasingly common format in fine dining, allowing experts to exchange techniques and ideas while offering guests access to cooking that would otherwise require international travel. The format has been embraced by a number of leading establishments across Europe and Asia in recent years.

The dinner on 3rd June will be a single-service event, with further details regarding wine pairings and the full menu yet to be disclosed. Tickets are priced at £285 per person.
