East London seafood stars Luna Omakase and Behind announce joint dinner collaboration

Luna Omakase and Behind, two of East London’s noted seafood restaurants, will stage a collaborative four-hands dinner on 7th July at Luna’s ninth-floor venue at 100 Liverpool Street. The evening will bring together executive chef Leonard Tanyag and Michelin-starred chef Andy Beynon for a one-night-only seafood menu, with a follow-up dinner planned at Behind in September.

There will be two sittings at 6pm and 8.30pm, with guests asked to arrive half an hour early as service will begin promptly. Those unable to make it to July’s interation will have a second chance when Tanyag joins Beynon at Behind’s Hackney site later in the year.

The chefs will present a 12-course omakase menu drawing on dishes, techniques and sourcing principles from both restaurants. The menu will be fully gluten- and dairy-free, and wine and sake pairings will also be offered. The team say the selection has been designed to move between Japanese preparations and British coastal cooking, incorporating raw seafood courses, fire-led dishes and signature plates from each chef.

Luna Omakase, which has 12 counter seats inside Los Mochis London City, serves a Sosaku-style Edomae omakase under Tanyag, whose cooking draws on Japanese tradition and dishes he learned from his mother. Behind, on Sidworth Street in Hackney, opened in October 2020 and was awarded a Michelin star 20 days later. Beynon’s cooking centres on British seafood, fire-led techniques and shellfish reductions, served at an 18-seat counter.

Tanyag said: “This collaboration felt incredibly natural from the beginning. Andy and I both approach seafood with a huge amount of respect, but through very different lenses. Bringing those styles together allows us to create something exciting, personal and completely unique for guests.”

Beynon added: “I’m really looking forward to this. I love Leo’s precision, creativity and the care that goes into the omakase experience he curates. We’re both all about the flavour, sourcing the best ingredients possible and making memorable experiences around the counter.”

July’s event marks the start of what both restaurants describe as a wider creative partnership between the chefs.
