Hawksmoor has collaborated with YouTuber and podcaster Callum Airey, known online as Calfreezy, to create a limited-edition bacon double cheeseburger – the Burgurr – which goes on sale at all of its UK and Ireland restaurants from today as part of the company’s 20th anniversary celebrations.

Airey has spent years reviewing and ranking burgers for an audience of millions and issues his own Golden Burger Award to those meeting his criteria. He was given creative control over Hawksmoor’s new dish, and worked directly with group executive chef Matt Brown to develop the recipe. The Internet personality has been a regular customer at the restaurant for several years and ranked their burgers highly well before the partnership emerged, so it seems this is a fortuitous match.

The Burgurr consists of two dry-aged British beef patties, American cheese, smoked streaky bacon, white onion and a burger sauce in a milk bun. It’s priced at £20 on its own, or £25 served with beef dripping fries and peppercorn sauce (which is how Airey enjoys it). 

Brown, who worked in several Michelin-starred kitchens before joining Hawksmoor, brings considerable expertise in the world of burgers, being the chef behind the Big Matt and the Royale with Cheese. The former was awarded World’s Best Burger in 2023, and the latter most recently placed seventh in the World’s 10 Best Burgers list.

“There wasn’t a burger already sitting on the menu plan waiting for Cal’s name. We built this from scratch, and I gave him real free rein,” he says. “Cal claims he knows burgers better than almost anyone, and from day one he had really clear ideas about what he did and didn’t want. We worked through every detail together, testing and refining, until we had something we were genuinely proud to put on the menu. It’s a proper Hawksmoor burger, built to the same standard as everything else we serve.”

Airey said the project came with some heat, given his public profile as a burger expert and discerning reviewer. “I’ve reviewed and ranked more burgers than I can count, so there is real pressure on me to get it right when it came to putting my own name on one,” he explained. “Hawksmoor was an obvious partner. I’ve been going there for years and know the level of detail and quality that goes into their ingredients and menus, so getting to create my own with Matt was a bit of a dream – I knew we could make something deserving of a place on its menu. I didn’t want anything over-the-top or built for a moment online; it needed to genuinely be a great burger. I’m clearly not a chef, so thankfully Matt did the actual cooking. My job was making sure every detail lived up to what I believe are the exacting standards of a great burger.”
