French bakery chain PAUL, founded in Lille in 1889 and now ubiquitous in the British capital, has introduced a seasonal autumn range of cakes, pastries and flavoured coffees. The new menu presents sweet treats including a Tiramisu Millefeuille and a Cherry & Pistachio Éclair, special lattes, and a single-origin Guatemalan coffee that will follow at three London cafés from 15th October.

The Tiramisu Millefeuille combines millefeuille pastry with the ingredients of the Italian dessert: coffee, crème pâtissière and mascarpone Chantilly, finished with an apricot glaze and a dusting of cocoa powder. It is sold by the slice in store, or can be ordered online as a whole cake in two sizes. The bakery has also adapted the Dubai chocolate trend, combining pistachio, crispy pastry and chocolate to create a Dubai Raspberry Cake Slice (also available as a whole cake). It layers chocolate sponge and pistachio buttercream with Dubai chocolate and raspberry jelly, topped with freeze-dried raspberry pieces. 

For even fruitier options, there’s a Cherry & Pistachio Éclair with a whole-fruit cherry jam filling, pistachio pastry cream and a white chocolate pistachio fondant topping, and a Red Fruits & Fig Cheesecake that’s topped with apricot glaze, figs, black grapes, redcurrants, pomegranate seeds and sprigs of rosemary.

The drinks menu includes a Crème Brûlée Latte, which pairs coffee with vanilla custard flavour, and a Maple Pecan Matcha Latte. PAUL’s signature hot chocolate is offered in two new flavours, Morello Cherry and Maple Pecan. A Hibiscus Green Tea topped with edible flowers is also available.

From 15th October, PAUL’s three Le Café stores at St Pancras, Three Quays and Tottenham Court Road will serve Code.194, a 100% Arabica single-origin coffee from Guatemala that is roasted in South London. Customers can switch to it for an additional 30p – and even better, each cup sold supports the families of coffee growers in the region through a “coffee kindergarten” scheme developed with local NGOs.

The family-owned bakery is serving the autumn range now in all of its UK stores, and the whole cakes are available online.
