Original recipe of the week: Easy roasted sweet potatoes

Sweet potatoes are traditionally an unloved vegetable, so we say show them some love this weekend. Packed full of all things good for you, they’re too tasty to miss out on.

This recipe is so simple and easy you could do it with you eyes closed (but please don’t try!).

Easy roasted sweet potatoes

Serves : As many as you like

Preparation time: less than a minute

Cook time: 40 mins

What you will need:

Sweet potatoes (one per person)

What you need to do:

  1. Place as many potatoes as you like in an oven, pre-heated to 200°C (Gas Mark 6).
  2.  No need to oil or season – simply place on a baking sheet and leave to roast until the skins have shrunk away from the flesh.
  3. When cooked, remove from the oven and peel away the skin and you’re ready to pair with anything you fancy.
