As the weather starts to get warmer and we start to worry about the ominous bikini body…salads spring to mind. We understand that salads are boring with a capital B so we have decided to jazz things up a bit. Mexican food is very on trend as well as healthy. We have combined two (or three) different salads to make a super healthy, yummy salad that definitely looks and tastes a lot more indulgent than it actually is.

Super Food Tortilla Salad Bowl

Cooking time: 5-10 minutes

What you will need:

½ a avocado (sliced)
1 red chilled (finely chopped)
80g of iceberg lettuce
25g of spelt (cooked)
1 fresh tortilla
25g salted pumpkin seeds
½ small red onion (chopped finely)
3 tomatoes (chopped finely)
20g black beans
20 sweet corn
1 handful of fresh coriander
1 tbs olive oil
Salt and pepper to taste
Juice of 1 lime
1 garlic clove  (crushed)

What you need to do:

  1. Pre-heat your oven to 200c. Get your fresh tortilla and rub it both sides with olive oil. Place this into an oven proof bowl and press down. Place in the middle of the oven and  cook until crispy.
  2. When cooled  remove the cooked tortilla from the bowl and  place on a plate. Into to tortilla place the spelt and then top with the lettuce.
  3. In a small bowl mix together the rest of the oil, lime, salt, garlic, pepper, tomato, red onion and red chilli.
  4. Onto the lettuce add the black beans and sweet corn and top this with the tomato mix you just made.
  5. Your nearly ready to go now – just top this with the avocado, pumpkin seeds and chopped coriander- add a little more lime juice or even zest if you like a good zing and enjoy.
