Feeling like a healthy treat that’s tasty, healthy, light and nutritious? As the weather gets warmer, we all want to avoid piling on the pounds, but if you’ve got a sweet tooth, this can often be hard. Our coconut bonbons are easy on the body and your teeth but will still leave you satisfied! This is probably the easiest recipe we’ve ever written (and probably the healthiest too).

Coconut Bonbons

Cooking time: 5-10 minutes

What you will need:

150g blanched almonds
100g desiccated coconut
50g coconut oil
80g  sweetened coco nibs
80ml maple syrup
1 handful of fresh dates
1 tbsp ground almonds
1 tbsp almond butter

What you need to do:

  1. Put everything you need in a food processor give a whiz until blended into a pulp.
  2. Next remove from the processor and shape lumps of the mixture into a balls shapes in your hand – any size you like.
  3. Place into cupcake cases and set in the fridge to firm up.
  4. When firm and set, remove from the fridge and enjoy!

Perfect for a post BBQ snack with a nice glass of chilled white wine!
